DESCRIPTION

100% Greek Style Humous made using authentic Extra Virgin Olive Oil from Olheart. It can be served by combining it either with vegetable sticks (eg cucumber / carrot) or with bread (gluten free).


INGREDIENTS

  • 400 gr chickpeas (which we have soaked the day before
  • 1 lt water
  • juice of 3 lemons (zest of 1 lemon)
  • 100 gr tahini
  • Salt Pepper

PROCESS

  • Put the water in a large pot to boil. Once it boils, add the chickpeas. Boil them without salt because the legumes are pulsating. Boil them very well for 1 to 1:30 hours so that they soften well.
  • Once they are ready, take them off the heat and drain them, keeping some of the water that we have boiled. Let them cool at room temperature.
  • When they have cooled, put them in a multi together with the rest of the ingredients and beat them until the mixture becomes smooth and soft (if we do not have a multi, use a hand blender)
  • If the mixture during the blending process is too tight with pieces of chickpeas that do not blend easily, add a little water from the chickpeas that we had kept slowly.
  • Add as much as needed to make it thick and smooth, without any pieces in the mixture
  • Leave it to rest in the fridge for 1 hour
  • Serve directly. Keep in the refrigerator for 3 days
