Pea Mint Soup

DESCRIPTION
Delicious Pea and Mint Soup made with Olheart Extra Virgin olive Oil. Serve hot and if you want add a little fresh chili & raw strips of carrot and zucchini.
INGREDIENTS
- 1 kg of peas
- 950 ml vegetable broth
- 1 medium potato
- 1-2 cloves of garlic
- 3 spring onions
- 1 handful of mint
- 20 gr olive oil
- Salt Pepper
PROCESS
- Peel the potatoes and cut them into small pieces
- Finely chop the spring onions and garlic
- Once chopped, boil them in the vegetable broth for 15 minutes
- Then add the peas, salt, pepper and mint and cook for 5 minutes
- Remove from the heat and mash the mixture with a hand blender
- At the end add the olive oil
