DESCRIPTION

Delicious Pea and Mint Soup made with Olheart Extra Virgin olive Oil. Serve hot and if you want add a little fresh chili & raw strips of carrot and zucchini.


INGREDIENTS

  • 1 kg of peas
  • 950 ml vegetable broth
  • 1 medium potato
  • 1-2 cloves of garlic
  • 3 spring onions
  • 1 handful of mint
  • 20 gr olive oil
  • Salt Pepper

PROCESS

  • Peel the potatoes and cut them into small pieces
  • Finely chop the spring onions and garlic
  • Once chopped, boil them in the vegetable broth for 15 minutes
  • Then add the peas, salt, pepper and mint and cook for 5 minutes
  • Remove from the heat and mash the mixture with a hand blender
  • At the end add the olive oil
